Two-dimensional polyacrylamide gel electrophoresis (2D-PAGE) was used as a proteomic approach to evaluate the muscle proteome of Nellore bulls and steers at different growth stages. Thirty-six Nellore calves were used, and half were surgically castrated one-week prior to weaning. Six bulls and six steers were randomly selected and harvested after feeding the same diet at 280, 380, and 480 kg. Longissimus muscle was sampled just after stunning for proteome analysis. Extracted muscle protein was separated in a 2D-PAGE and stained with Colloidal Coomassie. The differentially abundant proteins were mainly glycolytic enzymes. We suggest that glycolysis modulation by castration and maturity support intramuscular fat synthesis.
